Veggie / Vegan recipes and recommendations

Since late last year we’ve been seriously cutting meat out of our diet. Trying to avoid red meat and only eating chicken once a week, but now running out of ideas.

One of my current faves is a veggie chilli:


Anyone got any tried and tested recipes or recommend a vegan or veggie burger? I really miss a decent burger. Have tried the Linda McCartney mozzarella burger, which is OK, but doesn’t really hit the spot.

I don’t rate her stuff
 
I tried a meat free burger yesterday and although it was ok wasn’t the same as a big fat juicy burger
 
If you like McDonalds chicken nuggets the Quorn chicken nuggets taste almost exactly the same, I love them!
 
Hairy Bikers veggie feasts is good. Tried the Tom Yum soup last week and was superb. Must admit blanked the tofu and used king prawns.
 
Another vote for Quorn nuggets - they do taste exactly like McNuggets.

It's great that veganism and really sleazy food are not mutually exclusive.
 
If your into a bit of cooking, can highly recommend ottolenghis - flavour book. All veggie, personal highlight is the ragu which most people wouldn't know the difference between that and the real thing

My wife has a few Ottolenghi books. He does some amazing salads. Two in particular that spring to mind are his roasted cauliflower salad and his spicy carrot salad. They go so well with a BBQ.
 
Naked glory vegan burgers are fantastic with a slice of processed cheese.

Ditto Naked glory sausages.

The mince is great too for lasagne or cottage pie.

RIchmond meat free sausages are excellent - chilled ones available in Sainsburys and frozen version now in Iceland which don't need defrosting before cooking.
