Experimental dish of two eggs, baked with a tin of breakfast tomatoes.

Served with two large disks of black pudding.

Absolutely top notch.

I tried a variation of baked eggs this week: fry an onion with garlic/add curry powder and cumin seeds; then add a tin of chopped toms, and half a can of water; then add a tin of chickpeas and when the sauce has thickened a good few handfuls of spinach. Add the eggs at the end to bake. 10/10 would recommend

Sounds like shakshuka. The chickpeas are unusual but otherwise it's got the same ingredients. I tend to add a pepper, tomato puree, paprika, and some chilli flakes. You can basically chuck in anything you have laying around and want to use up and it'll turn out good (chorizo, feta, fresh herbs etc)

Oh it is a variation, definitely, we had some spinach lying about and I fancied some chickpeas. Goats cheese is good as well.
