What are you having for lunch? (rolling thread)

Not lunch but I have really got into jacket potatoes over the last few weeks.

They have to be creamy on the inside though - hate the floury ones.

It's a shame Spud U Like isn't still on Southchurch Road because I hot desk about two hundred metres away.

It turns out uber **** James Martin has a chain of Spud U Like outlets which I think I will give a miss.
 
Home made roasted celeriac, garlic, onion and butternut squash soup blitzed with a litre of water and a couple of Knorr veggie stock cubes plus other seasoning. Made a batch of 4 portions for lunch this week. Delicious.
 
That sounds nice. Did you use an online recipe guide or make it up yourself?
Made it up, WFH on a Thursday, shopping comes on a Friday, so its whatever veg is left in the fridge (usually Courgette, mushrooms and cherry toms. Plus chorizo, which is bad for you, but I am addicted to it (a bit like Southend United),
